Plentils® Pizza Crust

Adapted from www.KeeleyMcGuire.com By processing Plentils into a crumble, you can make and bake a pizza crust that’s flaky, crunchy, allergy-friendly and easy to make. Pair the pizza with a side salad and grapes for lunch. INGREDIENTS: 1 4oz. bag of Margherita Pizza Plentils, pulsated in a food processor until a crumble 5 T. of melted non-dairy buttery spread (or butter if your diet allows) Toppings of choice: non-dairy cheese, 1/2 cup of sauce, pepperoni, veggies, etc. DIRECTIONS: Preheat oven to 350°. Lightly grease an 8-9″ round cake pan. In a large bowl, add melted spread or butter to the crumbled Plentils. Mix until well coated. Pat firmly into the bottom of the cake pan, evenly. Grab & Go size bags of Plentils make for an easy walking taco or taco salad. For the Walking Taco, pack up the leftover taco meat in a silicone muffin cup, along with non-dairy & allergy-friendly cheese shreds and romaine. If you’re up for it, include a container of fresh salsa, as well. Pack grapes on the side. All your child has to do is open the chip bag, add the meat, cheese, lettuce, salsa (and any other toppings of choice), mix together and enjoy! Not keen on eating out of the bag? No problem. Vegans rejoice! Sweet and salty perfected with our crunchy, gluten-free lentil-based chip dipped in delicious dairy-free dark chocolate. INGREDIENTS: 1 4 oz. bag Enjoy Life Foods Sea Salt Plentils 1 C. Enjoy Life Foods Dark Chocolate Morsels 1 T. neutral flavored oil DIRECTIONS: Line 2 sheet trays with parchment or wax paper. Set aside. Place the baking morsels and oil in a small glass bowl. Set on top of simmering water in a saucepan. Stir until melted and then remove from heat. Dip each chip halfway into the chocolate and place on the parchment-lined sheet. Continue with the remaining chips.
