ingredients:

1 T ground chia seed or ground flaxseed
3 T warm water
½ C sunflower seed butter
2 T honey or agave syrup
1 T tapioca starch
1 T quinoa flakes
½ t baking powder
½ C Enjoy Life Beach Bash® Seed and Fruit Mix, split in half

 

directions:

Preheat oven to 350. Line a baking sheet with parchment paper.

Add the ground chia or flaxseed to large bowl. Pour warm water over the top, mix together and let sit 1-2 minutes until it gels.

Add the sunflower seed butter, and honey or agave, and mix to combine.

Add the tapioca starch, quinoa flakes, baking powder and half of the Enjoy Life Beach Bash® Seed and Fruit Mix to the bowl, and mix until thoroughly combined.

Scoop into 4 equal pieces and roll into a ball. Place on parchment lined baking sheet and flatten slightly with the palm of your hand.

Evenly sprinkle the remaining ¼ C Enjoy Life Beach Bash® Seed and Fruit Mix over the cookies and gently press into the dough.

Place in the oven and bake for 14-16 minutes until lightly browned. Cool on the cookie sheet and then store in the refrigerator tightly wrapped.

  1. my comment is a question…..I can not eat any grain other than brown rice. I was wondering if Kendra thought this recipe would work with brown rice flour or cooked rice? It looks so yummy….and doesn’t have dairy or egg, which I also can not have. would love to hear her thoughts……

    • Ronne – you can certainly try with the Brown Rice Flour, we use that in a lot of our products and it works well in cookies.

    • Hi Ronne! I would try using a rice breakfast cereal in place of the quinoa flakes. Arrowhead Mills makes a “Rice and Shine” breakfast cereal that might work well. If not, feel free to increase the tapioca starch to 2 T., that should also work to absorb some of the liquid. Happy cooking and good luck!

  2. I made these last night, so good! I couldn’t find the seed and fruit mix like on this site, but used a mixed berry dried fruit mix and a pumpkin/sunflower seed mix. With the mixed berry, it kind of tasted like a peanut butter and jelly sandwhich (I have a new nut allergy as well, so it was fabulous). I’ve read the recipe over and over and it does not say when to put in the sunflower butter. I put it in as the last ingredient and mixed it all together. My husband, who doesn’t have food allergies, loved these as well! I will be making these again!
