ingredients:
1 – 6 oz. Box Enjoy Life Chocolate Chip Cookies
2 C Enjoy Life Crispy Rice or Flax Cereal
1 – 10 oz. bag Enjoy Life Chocolate Chips
1 T vegetable oil
directions:
Line an 8”x8” pan with parchment or wax paper.
In a microwavable bowl, melt the chocolate chips in 30 second intervals until melted.
Cut each chocolate chip cookie into 9 pieces.
In a large bowl, combine cookies and cereal. Add melted chocolate and combine gently with a spatula. When mixture is completely coated, place into pan. Pat mixture down evenly and refrigerate for at least 1 hour.
Remove from pan and cut into squares.
May be stored uncovered for up to 4 days.












This recipe sounds delicious.. but what do you do with the 1 T of vegetable oil?

Yes, my son once didnt eat for 10 days, he regularly dosnt for 2, 3 even 4 days.If there are no meaidcl reasons that you can see and he is drinking (C has not drunk anything for days as well!)then dont worry (i know you will cos i do) Add some liquid vitamins as that way you will feel better!Is he constipated? Hope he feels better soon.
In addition to Sarah’s question…is there substitute for the vegetable oil since it is made from soybeans?
Yes, you can use canola oil.
I used coconut oil for its health benefits and added sweetness however if you didn’t like coconut I would do safflower instead of canola or veg oil because its allergy free of soy and/or corn.
I just made these and didn’t use any oil. They are delicious and don’t stick to pan due to parchment! But I could see how a little oil could make them taste even better (my husband thought peanut butter in it would taste great). So easy! Thanks for providing! Still curious about the oil though!
