4-6 ripe peaches*, peeled and sliced
1 T brown sugar
1 t water
1 box Enjoy Life Happy Apple Cookies
¼ C Enjoy Life Cinnamon Crunch Granola
¼ C brown sugar
2 T butter or margarine or Earth Balance
Preheat oven to 350 ° F
In a small saucepan, place 1T of the brown sugar and 1 t water on a very low flame to melt the brown sugar. Add peaches and cook until they are slightly soft, about 5-10 minutes.
In a food processor, coarsely grind Happy Apple Cookies, Cinnamon Crunch Granola, 1 T brown sugar and 1 T butter, margarine or Earth Balance.
Place peaches in an 8” x 8” pan, and sprinkle cookie and granola mixture over entire pan, completely covering the peaches.
Dot evenly with remaining butter, margarine or Earth Balance. Bake at 350 ° F for 15-20 minutes, cool and slice, or spoon and serve warm with your favorite topping.
Can be stored in refrigerator up to 3 days, covered with plastic wrap.
*Try substituting another stone fruit for peaches or apples in the fall
